Last night I cooked the hell out of some onions!  Boom!  They were good.  I made caramelized onions.  Two onions sautéed in a little butter and oil.  I cooked 'em for about an hour (low and slow).  So good!  They really shrunk down, two onions weren't enough.  The onions were the perfect compliment to what has become my new favorite cut of meat, skirt steak.

I've been cooking skirt steak for tacos.  But I used it as an entree last night.  It held its own.  Very tender and tasty.  I cooked it on the grill.  We had a big zucchini hanging around so I cooked that too!

I sliced it, breaded the slices, topped them with parmesan cheese, some butter and baked them at 375 until brown.  They were really great.  We've been hitting the zucchini hard this summer.  I'm looking for new/interesting/tasty ways to cook them.

I was so wrapped up in the onions and dessert I forgot to make a starch!  That's not like me.  In my early days of cooking I'd make two starches and no vegetable, ha ha.  I "made" strawberry shortcake.  Not much skill needed for that dish.  Bake some Bisquick biscuits, slice some strawberries, add sugar and you're done.  It was a good meal.

Cara made a great salad this past weekend.  A panzanella salad.  I never heard of a panzanella salad before.  But I'll try anything, that doesn't have sour cream or mayonnaise, once.  I was in charge of buying the  panzanella salad ingredients.  I came back from the store with panzanella fixins' but the tomatoes weren't ripe.  So, I drove to a farm stand, bought two, big, ripe tomatoes and a small bottle of chocolate milk.  How much do you think that cost?  They were hand-picked tomatoes.  They were pretty big.  The chocolate milk is a gourmet brand.  There were no prices on anything.  Do you have a figure in your mind yet?  The bill was approximately $18.55!  I said, what?  She said, "$18.55."  The tomatoes were about $6.99 a pound.  Ha ha ha ha ha ha ha!  I was in shock.  They had me over a barrel.  So, I bought them.  Cara couldn't believe how much I paid.  We figured the milk was probably around $5.00.  All of this for a salad I've never heard of (panzanella salad).  Long story short, it was a great panzanella salad.  Well worth the expensive tomatoes.


That last paragraph was an homage to the word "panzanella."  When Cara was explaining the salad to me she used the word "panzanella" a lot!  I said, how many times are you going to use the word "panzanella?"  After my comment she paid me back, big time.  She must have said "panzanella" a thousand times.  "Bob, will you pick up some ingredients for the panzanella salad?"  "I think this panzanella salad will be very good."  "Do you think my Dad will eat this panzanella salad?"  Text message:  "Reminder to pick up some more bread for the panzanella salad."  Very funny.
